Water and coffee

Most people do not realize that a coffee drink, more specifically brewed coffee is 98 per cent water. So it is very important to know what kind of water you use for brewing coffee. In my many years of experience in brewing coffee, I always use filtered tap water , purified water or mineral water. Distilled water , when used for coffee brewing results in a "flat tasting" brew similar to the flatness of beer or a soda left to stand overnight.

When people ask me for tips on how to make the perfect cup, I always start with these tips:

1. Use purified water , whenever you can. Water that tastes good will make good coffee.

2. Never use distilled water for coffee. Distilled has many other uses like in infant formula or for cleaning contact lenses.

3. Do not boil your coffee. Always use water off the boil.

4. Do not reheat coffee. Always make a fresh cup.

5. Never reuse grounds. Always use freshly-ground coffee.

6. If your brew is too strong for others, dilute it with hot water rather than lessen the coffee-water ratio.
