Banana and mango langka jubilee

Desserts served chilled, cold or iced become extra tempting when the heat of summer arrives. Chef Bruce Lim of Chef's Lab has a fruity concoction that might be a healthier substitute to your usual ice cream and frozen yogurt cravings.
Banana and mango langka jubilee

BANANA AND MANGO LANGKA JUBILEE

Ingredients:

200 g saba bananas

100 g mangoes (diced)

50 g butter (unsalted)

25 g mango and langka jam

25 g brown sugar

30 ml brandy

Toppings:

vanilla ice cream

mango and langka jam

Procedure:

1. Sauté bananas in butter for three minutes.

2. Add jam and mix until it dissolves.

3. Add sugar and stir for one minute.

4. Add brandy to pan (away from flame) then place pan back onto stove and flame.

5. Toss until the flame burns out then turn off heat.

6. Once the heat is off, add mangoes and toss.

7. Place in serving dish and top with ice cream.

To add more flavor, add a spoonful of mango and langka jam.

Parang gusto ko na hindi na lutuin sa pan ang mangoes and langka. Fresh na lang tapos with ice cream. :D
