Light and healthy sandwich

Tuna, for me, is one of the most versatile types of fish that I like to work with when I'm in the kitchen thinking of what food to prepare. Even canned tuna is a joy to me, especially for breakfast, because it comes in very handy and doesn't take much time and effort to prepare. My favorite canned tuna is "solid in water" because it's packed with meat and doesn't have the amount of salt you find in "in brine" and the fat you get from "in oil". When I run out of ideas for breakfast, I just grab a can of tuna "solid in water" and turn to my tried and tested recipe of Tuna and Mushroom Salad—especially when I have a good loaf of whole wheat bread around. I know we all have our own tuna salad recipes. For my version, I incorporate chopped button mushrooms into the tuna before mixing in the mayonnaise and the pickle relish. My tuna salad has plenty of pickle relish because my husband loves it, but if you don't like too much pickle relish, you can just go ahead and trim down the amount according to preference. Try this and see if you like it:

TUNA AND MUSHROOM SALAD SANDWICH
Tuna and Mushroom Salad Sandwich

Ingredients

1 can tuna "solid in water"

1/3 cup button mushrooms

1 pouch Lady's Choice MayoLite

2 tbsps. pickle relish, drained

pinch of sugar

whole wheat bread slices

lettuce

Procedure

1. Drain tuna from its water and flake roughly.

2. Chop button mushrooms and mix into the tuna.

3. Mix in the mayonnaise and pickle relish.

4. Add a pinch of sugar to balance the sweet and salty flavors. Mix well.

5. Toast bread slices.

6. Line a piece of bread with lettuce and tomato slices, spread some tuna and mushroom salad on top, cover with another slice of bread, slice sandwich diagonally in half, and serve.
