Patrice Freuslon, general manager and head chef of Society Lounge, prepared the day's elegant spread of Filipino-French fusion dishes. Personally, he said he likes to serve this menu to Filipino guests because it is somewhere between the flavors of the Philippines and of France. Chef Freuslon's inspired take on this East-meets-West, full-course culinary adventure further heightened everyone's excitement that day.
Appetites were stirred by an amuse-bouche of Warm cauliflower soup in truffle oil served in a shot glass. The soup was followed by a Roquefort salad in raspberry vinegar.
Furthering the Filipino-French theme of the meal, Chef Freuslon chose to serve as main course a fillet of Dover sole with cognac sauce, served with ratatouille and jasmine rice.
Raspberry coulis, raspberry jelly, carmelized popcorn, strawberries, raspberries and grapes breathed life into the Red Fruit Express that was served for dessert. Placed in layers inside a drinking glass, Chef Freuslon explained that the sweet treat is best eaten by mixing it all together and getting as much flavor as possible in a single spoonful.
Pieco Foods, Inc. offered the best of Malagos Farmhouse cheeses, providing bite-sized samples of Fresh Chevre, Fresh Goat Cheese, Turkish Feta, Blue Goat Cheese, Blue Peppato, and Queso Rustico. Proving popular among the ladies were the Fresh Chevre, which is a traditional French-style fresh goat cheese, and the flavorful concoction of Turkish Feta that tasted delicious eaten with French bread.
